Pickled cucumber salad
Wash the cucumbers and slice them thinly. Place the slices in a bowl, sprinkle with salt, and mix well. Let them sit for about 10 minutes to draw out excess moisture.
In a separate bowl, combine rice vinegar, sugar, soy sauce, sesame oil, and chili flakes. Mix until the sugar is dissolved.
Rinse the salted cucumber slices under cold water and drain well. Add the cucumbers to the dressing, tossing to coat evenly.
Sprinkle sesame seeds on top of the salad. Serve chilled or at room temperature.
