1. Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. In a rice cooker, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions. Once cooked, let it sit covered for 10 minutes.

2. Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice. Allow the rice to cool to room temperature.

3. Prepare the Salmon

Using a sharp knife, slice the raw salmon into thin sashimi-style pieces.

4. Assemble the Sake Don

In a bowl, place a serving of sushi rice at the bottom. Arrange the sliced salmon on top of the rice. Serve with soy sauce, wasabi, pickled ginger, and sprinkle with sesame seeds if using.
