Prepare the Tofu

Drain the tofu and wrap it in paper towels to remove excess moisture. Let it sit for about 15 minutes.

Cut Tofu

Once the tofu is dry, cut it into 1-inch cubes.

Coat Tofu

Dredge the tofu cubes in potato starch until evenly coated.

Heat Oil

In a deep pan or wok, heat vegetable oil over medium-high heat until hot.

Fry Tofu

Carefully add the tofu cubes to the hot oil and fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.

Prepare Dashi Broth

In a small pot, combine dashi stock, soy sauce, mirin, and salt. Heat gently until warm.

Assemble

Place fried tofu in a serving dish, pour warm dashi broth over the tofu, and top with grated ginger, grated daikon radish, and sliced green onions.
