Burger Preparation

    Prepare the Burger Patty

    In a bowl, combine the chuck beef and brisket. Mix until well combined and form into 4 equal patties. Season with salt and pepper.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and set aside, leaving the bacon grease in the pan.

    Cook the Burger Patties

    In the same skillet with the bacon grease, cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Add the Pimento Cheese

    In the last minute of cooking, top each burger patty with a generous scoop of pimento cheese and cover with a lid to melt the cheese.

    Toast the Buns

    While the cheese is melting, toast the buttery burger buns in a separate skillet or under a broiler until golden brown.

    Assemble the Burger

    On the bottom half of each toasted bun, layer the smoked red onions, the burger patty with melted pimento cheese, crispy bacon, and house pickles. Top with the other half of the bun.

    Serve immediately with your favorite side dishes.
