Preparation
- 1
Prepare the Rub
In a bowl, mix together paprika, brown sugar, black pepper, salt, garlic powder, onion powder, and cayenne pepper to create the rub.
- 2
Rub the Meats
Generously apply the rub to the brisket, ribs, and sausage. Wrap them in plastic wrap and let them marinate in the refrigerator for at least 4 hours, preferably overnight.
Cooking
- 3
Preheat the Smoker
Prepare your smoker for indirect heat and preheat to 225°F (107°C).
- 4
Smoke the Brisket
Place the brisket in the smoker and cook for about 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C).
- 5
Smoke the Ribs
Add the ribs to the smoker about 3 hours before the brisket is done. Cook until tender.
- 6
Smoke the Sausage
Add the sausage to the smoker during the last hour of cooking.
Sauce Preparation
- 7
Make the BBQ Sauce
In a saucepan, combine tomato sauce, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, and smoked paprika. Bring to a simmer and cook for 20 minutes.
Serving
- 8
Serve the BBQ
Slice the brisket and ribs, and serve with smoked sausage and BBQ sauce on the side.
