Mac & Cheese

Collard Greens

Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine chicken pieces and buttermilk. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Coating

In another bowl, mix flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

  3. 3

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat.

  4. 4

    Coat and Fry

Remove chicken from buttermilk, allowing excess to drip off. Dredge in the flour mixture and carefully place in the hot oil. Fry until golden brown and cooked through, about 15-20 minutes. Drain on paper towels.

Mac & Cheese

  1. 5

    Cook the Macaroni

In a large pot, cook elbow macaroni according to package instructions until al dente. Drain and set aside.

  2. 6

    Make the Cheese Sauce

In the same pot, melt butter over medium heat. Stir in flour to create a roux. Gradually add milk, stirring until thickened. Add cheddar cheese, salt, and pepper. Stir until cheese is melted.

  3. 7

    Combine and Bake

Add cooked macaroni to the cheese sauce, stirring to combine. Transfer to a baking dish, top with breadcrumbs, and bake at 350°F (175°C) for 20-25 minutes until bubbly and golden.

Collard Greens

  1. 8

    Sauté Onions and Garlic

In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, cooking until softened.

  2. 9

    Cook the Collards

Add chopped collard greens to the pot, stirring to mix. Pour in chicken broth, season with salt and pepper, and cover. Simmer for 30-45 minutes until greens are tender.
