Prepare the Wings
Rinse the chicken wings and pat them dry with paper towels. In a large bowl, mix together smoked paprika, garlic powder, onion powder, salt, and black pepper. Toss the wings in the spice mix until evenly coated.

Smoke the Wings
Preheat your smoker to 225°F (107°C). Place the seasoned chicken wings on the smoker rack and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Toss in Sauce
Remove the wings from the smoker and toss them in your choice of sauce until well coated.

Serve
Serve the smoked wings with celery sticks and blue cheese dressing on the side.
