    Prepare the Chicken

    Pat the chicken dry with paper towels. Cut the chicken in half along the backbone and remove it. Rub the chicken halves with olive oil, then season generously with smoked paprika, garlic powder, onion powder, salt, and black pepper.

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). If using wood chips, soak them in water for about 30 minutes before adding them to the smoker.

    Smoke the Chicken

    Place the chicken halves skin-side up in the smoker. Smoke for approximately 3-4 hours, or until the internal temperature reaches 165°F (74°C) and the meat is tender and pulls away from the bone easily.

    Add Barbecue Sauce

    During the last 30 minutes of cooking, brush your choice of barbecue sauce onto the chicken and continue to smoke until the sauce is caramelized and sticky.

    Rest and Serve

    Remove the chicken from the smoker and let it rest for about 10 minutes before serving. Serve with additional barbecue sauce and your choice of two sides.
