Our Carolina take on the now-famous quesabirria tacos. Chopped pork, melty cheese inside a griddled flour tortilla served with a spicy pork stock for dipping.

    Prepare the Pork

    In a large pot, combine the pork shoulder, dried guajillo and ancho peppers, onion, garlic, cumin, oregano, salt, and black pepper. Pour in the beef broth and bring to a boil.

    Simmer

    Reduce heat to low, cover, and let simmer for about 2 hours or until the pork is tender and easily shredded.

    Shred the Pork

    Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot with the broth, stir to combine, and keep warm.

    Prepare the Tortillas

    In a separate skillet, heat a small amount of oil over medium heat. Place a flour tortilla in the skillet, sprinkle with shredded cheese, add a portion of the shredded pork, and fold the tortilla over.

    Grill

    Cook for about 2-3 minutes per side or until golden brown and the cheese is melted. Repeat with remaining tortillas.

    Serve

    Serve the quesabirria tacos with a side of the spicy pork stock for dipping. Garnish with fresh cilantro, lime wedges, and sliced jalapeño.
