Prepare the Filling
In a mixing bowl, combine the smoked chicken, shredded cheese, and salt. Mix well until the ingredients are evenly combined.

Roll the Taquitos
Take a corn tortilla and place about 2 tablespoons of the chicken and cheese mixture in the center. Roll tightly and secure with a toothpick if necessary. Repeat with the remaining tortillas and filling.

Fry the Taquitos
In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the taquitos in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble and Serve
Place the fried taquitos on a serving platter. Drizzle with lime crema and arbol chili sauce. Top with crumbled queso fresco, chopped cilantro, and pickled red onions. Serve immediately.
