    Prepare the Brisket

    Preheat your smoker to 225°F (107°C). In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, and brown sugar. Rub the spice mixture all over the brisket.

    Smoke the Brisket

    Place the brisket in the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C). Remove from the smoker and let it rest for at least 30 minutes before slicing.

    Make the Slaw

    In a large bowl, combine shredded cabbage, mayonnaise, apple cider vinegar, and a pinch of salt. Mix well and set aside.

    Assemble the Sandwich

    Slice the brisket thinly against the grain. On each buttery bun, layer sliced brisket, drizzle with Midwood sauce, add a handful of slaw, and top with pickles. Close the bun and serve.
