Prepare the Brisket
Season the brisket with salt and black pepper. Smoke the brisket at 225°F (107°C) for about 8-10 hours or until it reaches an internal temperature of 195°F (90°C). Let it rest for at least 30 minutes before chopping.

Once the brisket has rested, chop it into bite-sized pieces and mix it with the Midwood sauce in a large bowl.

Prepare the Smoked Red Onions
Slice the onions and smoke them for about 30 minutes until they are tender and have a smoky flavor.

Assemble the Sandwiches
On a slice of toasted Texas toast, layer the chopped brisket mixture, smoked red onions, and your choice of cheddar, pimento, or blue cheese. Top with another slice of Texas toast.
