    Prepare the Pork

    Rub the pork shoulder with salt, black pepper, garlic powder, onion powder, brown sugar, and red pepper flakes. Ensure the seasoning is evenly coated.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Soak the hickory wood chips in water for 30 minutes, then drain. Place the soaked wood chips in the smoker and add the seasoned pork shoulder. Smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

    Rest and Shred

    Remove the pork from the smoker and let it rest for 30 minutes. Shred the pork using two forks and place in a large bowl.

    Make the Sauce

    In a separate bowl, combine apple cider vinegar and water. Adjust seasoning to taste if necessary.

    Dress the Pork

    Lightly dress the shredded pork with the vinegar sauce, mixing until the pork is moistened to your liking. Serve immediately.
