Method

Prepare the Salmon

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Brush with olive oil, then season with salt and black pepper.

    Apply Barbecue Sauce

    Brush a generous amount of barbecue sauce over the top of each salmon fillet.

    Bake the Salmon

    Place the salmon fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork.

Prepare the Salsas

    Make Avocado Corn Salsa

    In a bowl, combine diced avocados, sweet corn, diced red onion, chopped cilantro, lime juice, and salt. Mix gently to combine.

    Make Pico de Gallo

    In another bowl, combine diced tomatoes, diced jalapeño, diced red onion, chopped cilantro, lime juice, and salt. Mix well.

Serve

    Plate the Dish

    On a serving plate, place a generous scoop of avocado corn salsa as a base. Top with a baked salmon fillet, then garnish with pico de gallo. Serve with your choice of side.
