    In a blender, combine the dried guajillo and ancho chiles (remove stems and seeds), garlic, cumin, oregano, lime juice, salt, black pepper, and brown sugar. Blend until smooth.

    Marinate the Pork

    Place the pork shoulder in a large bowl and pour the marinade over it. Ensure the pork is well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and grill or roast it for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).

    Prepare the Pineapple

    While the pork is cooking, cut the pineapple into small chunks. Grill the pineapple pieces for about 5-7 minutes until caramelized.

    Once cooked, let the pork rest for 10 minutes, then chop it into small pieces. Serve the pork on warm corn tortillas, topped with grilled pineapple, diced onion, and chopped cilantro.
