Preparation of Fries

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to resemble fries.

Soak the Potatoes
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This removes excess starch and helps achieve crispiness.

Dry the Potatoes
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.
Frying the Fries

Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add a batch of fries to the hot oil, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy.

Drain the Fries
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt immediately.

Toss with Truffle Oil
In a large mixing bowl, combine the hot fries with truffle oil. Toss gently to coat the fries evenly.

Sprinkle the grated parmesan cheese and chopped fresh parsley over the fries. Toss again until well combined.

Transfer the truffle fries to a serving platter and enjoy immediately while hot.
