    Prepare the Coffee

    Brew the espresso coffee and allow it to cool to room temperature.

    Separate the Eggs

    Separate the egg yolks and egg whites into two different bowls.

    Mix Egg Yolks and Sugar

    In the bowl with the egg yolks, add the granulated sugar and whisk until the mixture is pale and creamy.

    Add Mascarpone and Vanilla

    Add the mascarpone cheese and vanilla extract to the egg yolk mixture. Beat until smooth and well combined.

    Whip Egg Whites

    Using a clean mixer, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the mascarpone mixture. Be careful not to deflate the egg whites.

Assembly

    Soak the Ladyfingers

    Quickly dip each ladyfinger into the cooled espresso, ensuring they are soaked but not overly soggy.

    Layer the Ingredients

    In a rectangular or square dish, arrange half of the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers.

    Repeat Layers

    Add another layer of soaked ladyfingers on top of the mascarpone layer, then spread the remaining mascarpone mixture on top.

Chilling and Serving

    Chill the Tiramisu

    Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for the best flavor.

    Dust with Cocoa and Serve

    Before serving, dust the top with cocoa powder and sprinkle with dark chocolate shavings.
