Method

Preparing the Sushi Rice

    Rinse the Rice

    In a fine mesh strainer, rinse 2 cups of sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the water is absorbed.

    Season the Rice

    Remove the saucepan from heat and let it sit, covered, for 10 minutes. In a small bowl, mix together 1 tablespoon of rice vinegar, 1 teaspoon of sugar, and 0.5 teaspoon of salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula, being careful not to mash the grains.

Preparing the Fillings

    Slice the Fish

    Using a sharp knife, slice the fresh salmon and tuna into thin strips, about 1/4 inch thick.

    Prepare the Vegetables

    Peel the avocado and slice it into thin wedges. Slice the cucumber and carrot into thin julienne strips.

Assembling the Sushi

    Prepare Nori Sheet

    Lay a nori sheet shiny side down on a bamboo sushi mat or a clean surface.

    Spread the Rice

    Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Place a few slices of fish, avocado, cucumber, and carrot in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to keep it tight. Seal the edge of the nori with a bit of water.

    Slice the Rolls

    Using a sharp knife, slice the rolled sushi into bite-sized pieces, about 1 inch thick. Wipe the knife with a damp cloth between cuts.

Serving the Sushi

    Arrange on Platter

    Place the sushi rolls on a serving platter and garnish with pickled ginger. Serve with soy sauce and wasabi on the side.
