Method

Preparing the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Add the salmon fillets and coat them well with the marinade. Let it marinate for at least 30 minutes.

    Grill the Salmon

    Preheat your grill to medium-high heat. Place the marinated salmon fillets on the grill and cook for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

Preparing the Asparagus

    Prepare the Asparagus

    Trim the woody ends off the asparagus spears. Toss them in olive oil, salt, and black pepper.

    Grill the Asparagus

    Place the asparagus on the grill, cook for about 4-6 minutes, turning occasionally, until they are tender and slightly charred.

Making the Hollandaise Sauce

    Melt the Butter

    In a saucepan, melt the butter over low heat until it's completely melted and just starting to bubble. Remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is thick and pale.

    Combine and Cook

    Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in the melted butter while whisking constantly until the sauce thickens. Season with salt and cayenne pepper.
