Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Set Up Breading Station
In a shallow bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

Bread the Calamari
Dip each calamari ring in the flour mixture, shaking off excess. Then dip in the beaten eggs, and finally coat with breadcrumbs. Set aside on a plate.
Frying Calamari

Heat the Oil
In a large, deep pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Fry the breaded calamari in batches, cooking for about 2-3 minutes or until golden brown. Do not overcrowd the pot.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately.

Sauté Garlic
Add minced garlic to the hot oil and sauté for about 1 minute until fragrant, being careful not to burn it.

Prepare the Sauce
Add the canned crushed tomatoes, dried oregano, and salt. Stir to combine and let simmer for about 15 minutes.

Finish Sauce
Stir in the chopped fresh basil just before serving.
