    Prep and parboil

    Wash potatoes and cut into 1 to 1¼-inch cubes (leave skins on for texture). Place in a large pot and add enough cold water to cover by 1 inch. Add 1 tablespoon kosher salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are just tender when pierced with a fork, about 8–10 minutes depending on size. Do not overcook — they should hold shape. Drain well in a colander and let steam dry for 5 minutes.

    Dry and toss

    Transfer drained potatoes to a sheet pan or large bowl and let them sit uncovered for a few minutes so surface moisture evaporates; gently shake the pan or toss to roughen edges — this helps create a crisp exterior when frying or roasting.

Frying / roasting

    Heat a large heavy skillet (cast-iron preferred) over medium-high heat. Add 4 tablespoons vegetable oil and heat until shimmering but not smoking. Add potatoes in a single layer (work in two batches if needed) without crowding. Cook, undisturbed, 4–5 minutes until golden on the bottom, then flip and continue to cook, stirring occasionally, for another 6–8 minutes until evenly browned and crisp on all sides. Reduce heat slightly if they begin to burn.

    Season while frying

    When potatoes are mostly crisp (about 8–10 minutes total per batch), sprinkle smoked paprika, Aleppo pepper (or crushed red pepper), ground cumin, and ½ teaspoon black pepper over them. Toss to coat and cook another 1 minute so the spices bloom in the hot oil. Transfer crisped potatoes to a paper towel–lined tray while you finish remaining batches, adding remaining 2 tablespoons oil as needed.

    Oven-roast alternative

    Preheat oven to 220°C (425°F). Toss parboiled, dried potatoes with 6 tablespoons oil and the spice mix. Spread on a rimmed baking sheet in a single layer and roast 25–30 minutes, flipping once, until deep golden and crisp. Use this method if you prefer oven cooking or need to feed a crowd.

Garlic-cilantro sauce

    Make sauce

    While potatoes are cooking, combine minced garlic, chopped cilantro (stems included), lemon juice, olive oil, red wine vinegar (if using), 1 teaspoon kosher salt, and ¼ teaspoon sugar in a bowl. Stir vigorously to emulsify. Taste and adjust seasoning — add more salt, lemon, or a pinch of sugar as needed. For a smoother sauce, pulse briefly in a food processor or blender until evenly combined but still slightly textured.

    Warm garlic gently (optional)

    If you prefer mellower raw garlic flavor, briefly warm 1 tablespoon olive oil in a small skillet over low heat, add 2 teaspoons of the minced garlic and cook just 30–45 seconds until fragrant (do not brown), then stir this warmed garlic and oil into the sauce mixture.

Finishing & assembly

    Place hot crisp potatoes in a large mixing bowl. Pour the garlic-cilantro sauce over the potatoes while they're hot so they absorb the flavors. Gently toss until evenly coated. Taste and add more salt, lemon juice, or crushed red pepper to taste.

    Transfer to a serving platter, garnish with fresh cilantro leaves and serve immediately with lemon wedges on the side for squeezing. Batata Harra is best eaten hot and crisp.
