Roasted eggplant base

Preheat and prepare
Preheat the oven to 220°C (425°F). Line a baking sheet with foil or parchment for easier cleanup.

Roast eggplants
Prick the eggplants a few times with a fork, rub their skins lightly with 2 tbsp olive oil and sprinkle with 1 tsp kosher salt. Place them on the prepared baking sheet and roast until the skins are charred and the flesh is very soft when pierced with a knife, about 35–45 minutes depending on size. Turn once halfway through for even charring.

Steam and cool
Remove the eggplants from the oven and transfer immediately to a bowl. Cover tightly with plastic wrap or a lid and let steam for 10 minutes — this loosens the flesh and reduces bitterness. Once cool enough to handle, slice open and scoop the flesh into a fine-mesh sieve or colander to drain for 10 minutes, pressing gently to remove excess liquid.

Prepare aromatics
While the eggplant drains, combine 3 tbsp tahini, 3 tbsp fresh lemon juice, 2 minced garlic cloves, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp black pepper and 1 tsp granulated sugar (optional) in a medium bowl. Whisk until smooth. If tahini is thick, add 1–2 tsp warm water to loosen.

Combine eggplant and seasonings
Transfer the drained eggplant flesh to a cutting board and finely chop with a knife, or place into a bowl and mash with a fork for a slightly chunky texture. For a smoother dip, pulse in a food processor — pulse briefly (6–8 short pulses) to avoid turning it into a purée. Add the tahini-lemon-garlic mixture and gently fold or pulse until fully incorporated. Taste and adjust salt, lemon, or tahini as needed.

Adjust consistency and seasoning
If the baba ganoush feels too thick, stir in up to 1 tbsp warm water or additional olive oil until you reach the desired creaminess. Check seasoning and add fine sea salt or more lemon juice to taste.

Plate and garnish
Transfer the baba ganoush to a shallow serving bowl, use the back of a spoon to create a shallow well in the center. Drizzle 1 tbsp extra-virgin olive oil over the top, sprinkle with 2 tbsp chopped fresh parsley, a pinch of smoked paprika if desired, and scatter 2 tbsp pomegranate seeds if using. Finish with a light sprinkle of flaky salt to taste.

Serve
Serve at room temperature with warm pita, flatbread, or raw vegetables. Leftovers can be refrigerated in an airtight container for up to 4 days; bring to room temperature before serving.
