Form patty

Handle the 8oz of Black Angus ground beef gently; form into a loosely packed round patty about 3/4 to 1 inch thick with a slightly larger diameter than the bun (it will shrink while cooking). Make a slight indentation (thumbprint) in the center to reduce dome-up.

Season both sides of the patty generously with kosher salt and freshly ground black pepper right before cooking. Do not overwork the meat when seasoning.

Preheat a grill or heavy skillet/griddle to medium-high (around 400–450°F / 200–230°C). Brush the cooking surface with the neutral oil to prevent sticking.

Place the patty on the hot surface. For medium-rare to medium doneness, cook 3.5–4 minutes on the first side without pressing. Flip once using a spatula.

After flipping, cook 3–4 minutes for medium (adjust time for desired doneness: shorter for rare, longer for well-done). Internal temperature guide: 125–130°F rare, 135°F medium-rare, 145°F medium, 160°F well done (use an instant-read thermometer).

About 1 minute before the patty is done, place provolone slices on top so they melt. Remove the patty to a warm plate and tent loosely with foil to rest for 3–5 minutes.

Bun & Spread

While the burger cooks, butter the cut sides of the bun lightly with softened unsalted butter.

Place the buns cut-side down on the grill or skillet for 30–60 seconds until golden and lightly toasted. Watch carefully to avoid burning. Remove and keep warm.

Make Chef Michael's BBQ mayo (optional)

If using store-bought Chef Michael's BBQ mayo, spoon 2 tablespoons onto the bottom bun. To make a quick version at home: whisk together 1/4 cup mayonnaise, 1 tablespoon BBQ sauce, 1/4 tsp smoked paprika, 1/2 tsp lemon juice and a pinch (1/8 tsp) of salt. Adjust to taste and spread 2 tablespoons on the bottom bun.

Assembly & Toppings

Spread the BBQ mayo evenly on the bottom bun.

Place the rested, cheese-topped burger patty on the sauced bottom bun.

Top the patty with butter lettuce leaves, 2 slices of tomato, 4 rings of red onion (adjust amount to preference), and 4 pickle slices.

Place the top bun over the assembled burger and press gently to compact slightly.

Serve immediately with fries or your choice of sides.
