Method
Scrambled Eggs
Beat eggs
Crack 2 large eggs into a small bowl. Add 2 tablespoons milk, a pinch of kosher salt and a pinch of black pepper. Whisk until yolks and whites are fully combined and slightly frothy.
Cook eggs
Heat a nonstick skillet over medium-low heat. Add 1 teaspoon unsalted butter and let it melt, tilting the pan to coat. Pour the egg mixture into the skillet. Let sit undisturbed for about 10–15 seconds, then gently push cooked edges toward the center with a silicone spatula, allowing uncooked egg to flow outward. Continue gently folding every 10–15 seconds until eggs are mostly set but still slightly glossy, about 1–2 minutes. Remove from heat and transfer to plate (eggs will finish setting off the heat).
French Toast
Make custard
In a shallow bowl, whisk 1 large egg with 2 tablespoons whole milk, 1 teaspoon vanilla extract and a pinch of ground cinnamon until smooth.
Soak bread
Lay 2 slices of bread flat and briefly dip each slice into the custard, about 5–7 seconds per side, pressing gently so the bread soaks but does not become soggy. Allow excess to drip back into the bowl.
Cook
Heat a separate nonstick skillet or griddle over medium heat and add 1 teaspoon unsalted butter. When butter foams, place soaked bread slices in the pan. Cook 1.5–2 minutes per side until golden brown and set. Transfer to plate and keep warm.
Finish and serve
Top french toast with 2 tablespoons maple syrup and, if desired, sprinkle 1 teaspoon powdered sugar and add 2 tablespoons fresh berries.
Bacon
Cook bacon (stovetop)
Place 1 bacon strip in a cold skillet. Turn heat to medium and cook 3–4 minutes per side for thin bacon (longer for thicker) until crisp to preferred doneness, flipping once. Transfer to a paper towel-lined plate to drain. Alternatively, bake in a 400°F (200°C) oven for 12–15 minutes on a foil-lined sheet for even crisping.
Drink (serve)
Pour 6 oz of your chosen drink (orange juice or whole milk) into a child-appropriate cup. Serve chilled.
Plating and timing
Arrange the scrambled eggs, two slices of french toast and the bacon strip on a kid-sized plate. Add berries alongside the french toast if using. Serve immediately with the drink.
Timing tips: Start bacon first (if using stovetop), then begin french toast custard and cook bread. While french toast cooks, make and cook the scrambled eggs so all components are hot and ready within about 12–15 minutes.
