Escargot & Mushroom Base

Prepare mushrooms

Preheat oven to 400°F (200°C). Clean mushrooms by wiping with a damp cloth and remove stems. If mushroom caps are very large, trim edges to create a stable base. Arrange caps, hollow side up, on a baking sheet or in individual ovenproof dishes sized to hold one or two caps each.

Sauté aromatics

In a medium skillet over medium heat, melt 2 tbs of the unsalted butter. Add minced shallots and sauté 1–2 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant, taking care not to brown.

Deglaze & make sauce

Add the dry Burgundy wine to the skillet to deglaze, scraping any browned bits. Bring to a simmer and reduce by about half, about 3–4 minutes. Stir in heavy cream and simmer 1–2 minutes until slightly thickened.

Season & combine

Remove skillet from heat and whisk in 2 tbs unsalted butter until smooth. Stir in chopped parsley, thyme leaves, lemon juice, salt, and black pepper. Taste and adjust seasoning. If sauce is too thin, return to low heat and reduce another minute.

Assemble escargot in caps

Place one escargot into each mushroom cap (for large caps you may place one; for smaller caps, place one escargot per cap as appropriate). Spoon about 1 tsp of the Burgundy garlic butter sauce over each escargot and into the mushroom cavity so each cap has a little sauce (approx. 1–1.5 tbs sauce per cap).

Puff Pastry Topping & Baking

Prepare puff pastry

Roll out the thawed puff pastry sheet on a lightly floured surface to smooth seams. Using a small round cutter (about 2–2.5 inches / 5–6 cm) or sharp knife, cut 24 rounds — one to fit over each mushroom cap. Re-roll scraps as needed and chill briefly if pastry becomes too warm.

Egg wash

Beat the large egg with 1 tsp cold water in a small bowl to make an egg wash. Brush the rim of each mushroom cap lightly with egg wash so the pastry will adhere.

Top & glaze

Set a puff pastry round on top of each mushroom so it seals to the egg-washed rim. Lightly brush the pastry tops with egg wash and, if desired, score a small vent slit in each top to allow steam to escape.

Bake

Bake in the preheated 400°F (200°C) oven for 14–18 minutes, rotating the pan once, until the pastry is puffed and golden and sauce is bubbling at the edges. If using individual ramekins or shells, baking time may be 16–20 minutes; watch for browning.

Finish

Remove from oven and let rest 2–3 minutes. Sprinkle with flaky sea salt (optional) and additional chopped parsley. Transfer to a warmed serving platter or individual plates. Serve immediately with lemon wedges and microgreens if using.
