Cooking Vermicelli

    Boil Water

    In a large pot, bring water to a boil over high heat.

    Cook Vermicelli

    Once the water is boiling, add the vermicelli noodles and cook according to package instructions, usually about 3-5 minutes, until tender.

    Drain and Rinse

    Drain the vermicelli noodles in a colander and rinse under cold water to stop the cooking process. Set aside.

Preparing Vegetables

    Chop Vegetables

    While the noodles are cooking, peel and julienne the carrot. Dice the bell pepper, chop the green onion, and mince the garlic.

    Sauté Spinach

    In a large skillet, add a splash of water or oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Then add the spinach and cook until wilted, about 2-3 minutes.

    Add the julienned carrot and diced bell pepper to the skillet, cooking for an additional 3-4 minutes until they are slightly tender.

    In a small bowl, combine soy sauce, sesame oil, rice vinegar, honey, and red pepper flakes. Whisk together until well combined.

    Combine Noodles and Vegetables

    Add the cooked vermicelli noodles to the skillet with the sautéed vegetables. Pour the sauce over the mixture and toss everything together until well coated and heated through, about 2-3 minutes.

Garnishing

    Remove from heat and serve hot, garnished with sesame seeds and fresh cilantro on top.
