Cooking the Pasta

Boil Water
In a large pot, fill with water and add 1 tablespoon of salt. Bring to a boil over high heat.

Cook Pasta
Once the water is boiling, add the pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

Drain Pasta
Once cooked, drain the pasta in a colander and set aside. Reserve some pasta water if desired.
Preparing the Vegetables

Chop Vegetables
While the pasta is cooking, chop the cherry tomatoes, bell pepper, and zucchini into bite-sized pieces. Mince the garlic cloves.

Sauté Vegetables
In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

Cook Remaining Vegetables
Add chopped cherry tomatoes, bell pepper, and zucchini to the skillet. Sauté for about 5-7 minutes, until the vegetables are tender.

Add Spinach
Stir in the spinach and cook until wilted, about 2 minutes. Season with black pepper.

Mix Pasta and Vegetables
Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine, adding reserved pasta water if needed to moisten.

Serve
Serve hot, garnished with grated Parmesan cheese if desired. Enjoy your vegetarian pasta!
