Prepare the Pasta

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.
Prepare the Sauce

Cook the Pancetta
In a large skillet, over medium heat, add the diced pancetta. Cook until crispy and golden, about 5-7 minutes. Remove from heat and set aside.

Mix the Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper and a pinch of salt.
Combine and Serve

Combine Pasta and Sauce
Return the drained spaghetti to the skillet with the pancetta. While the pasta is still hot, quickly pour in the egg and cheese mixture, tossing continuously to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve immediately, garnished with additional grated Parmesan and black pepper if desired.
