Lemon Thyme Butter

Method

Preparing the Salmon

    Season the Salmon

    Rub the salmon fillets with olive oil, salt, and black pepper on both sides.

    Sear the Salmon

    In a hot skillet, add a little olive oil. Place the salmon fillets skin-side down and sear for about 4-5 minutes until crispy. Flip and sear the other side for another 3-4 minutes until cooked through.

Cooking the Collard Greens

    Sauté Garlic

    In a large pot, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Collard Greens

    Add chopped collard greens to the pot along with vegetable broth, red pepper flakes, and salt. Cover and cook for about 25-30 minutes until the greens are tender.

Making the Romesco Sauce

    Blend the Ingredients

    In a food processor, combine roasted red bell pepper, toasted almonds, minced garlic, olive oil, red wine vinegar, salt, and black pepper. Blend until smooth.

Preparing the Lemon Thyme Butter

    Mix the Butter

    In a small bowl, combine softened butter with lemon zest, fresh thyme leaves, and a pinch of salt. Mix until well combined.

Plating the Dish

    Assemble the Plate

    On each plate, place a generous serving of collard greens, top with a seared salmon fillet, drizzle with romesco sauce, and finish with a dollop of lemon thyme butter.
