Braised Short Ribs

    Season the Ribs

    Rub the beef short ribs with salt and black pepper evenly on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, approximately 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Aromatics

    In the same pot, add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.

    Add Remaining Ingredients

    Return the short ribs to the pot, add beef broth, thyme, and bay leaf. Bring to a simmer.

    Braise the Ribs

    Cover the pot and transfer it to a preheated oven at 300°F (150°C). Braise for 2.5 to 3 hours, or until the meat is tender and falls off the bone.

    Shred the Meat

    Remove the pot from the oven and let it cool slightly. Take the ribs out and shred the meat, discarding the bones and excess fat. Return the shredded meat to the pot and stir to combine with the sauce.

Melt Assembly

    Prepare the Bread

    Preheat your broiler. Slice the bread rolls in half and spread the softened butter on the cut sides.

    Assemble the Melt

    On the bottom half of each roll, add a generous portion of the shredded short rib mixture and top with provolone cheese.

    Broil the Sandwiches

    Place the assembled sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, sprinkle with chopped parsley, place the top half of the roll on, and serve hot.
