Frites or Sweet Frites

Method

Pickled Onions

  1. 1

    Prepare Onions

Slice the red onion thinly and place it in a clean jar.

  2. 2

    Make Pickling Liquid

In a small saucepan, combine apple cider vinegar, sugar, salt, and water. Heat over medium heat, stirring until sugar dissolves.

  3. 3

    Pickle the Onions

Pour the hot pickling liquid over the onions in the jar, ensuring they are fully submerged. Let cool to room temperature, then refrigerate for at least 1 hour before using.

Jalapenos

  1. 4

    Prepare Jalapenos

Slice the jalapenos thinly, removing seeds if less heat is desired.

  2. 5

    Pickle the Jalapenos

In a clean jar, add the sliced jalapenos, salt, and apple cider vinegar. Ensure the jalapenos are submerged in the vinegar.

  3. 6

    Marinate the Jalapenos

Let sit at room temperature for about 30 minutes before using. For better flavor, refrigerate for at least a few hours.

French Bread

  1. 7

    Prepare Bread

Slice the French baguette into 1-inch thick pieces.

Frites or Sweet Frites

  1. 8

    Prepare Potatoes

Peel and cut the potatoes into thin strips for classic frites or into wedges for sweet frites.

  2. 9

    Soak Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

  3. 10

    Heat Oil

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

  4. 11

    Fry Potatoes

Fry the potatoes in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels.

  5. 12

    Season Frites

Season immediately with salt to taste.
