    Prepare the Potatoes

    Wash and dice the low country potatoes into small cubes. Place them in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for about 10 minutes or until just tender. Drain and set aside.

    Slice the Onion

    While the potatoes are cooking, slice the onion into thin strips.

    Prepare the Tomatoes

    Rinse the cherry tomatoes and set aside.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes until they are soft and golden brown. Remove from skillet and set aside.

    Cook the Potatoes

    In the same skillet, add the remaining tablespoon of olive oil. Add the drained potatoes, salt, black pepper, garlic powder, and paprika. Cook for about 8-10 minutes, stirring occasionally, until the potatoes are golden and crispy.

    Blister the Tomatoes

    Add the cherry tomatoes to the skillet with the potatoes and cook for an additional 5 minutes, or until the tomatoes are blistered and slightly burst.

    Combine and Serve

    Return the caramelized onions to the skillet and mix everything together. Remove from heat and sprinkle crumbled feta cheese on top. Serve warm.
