    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Stir in the flour and cook for about 1 minute, stirring constantly to form a roux.

    Add Milk

    Gradually whisk in the milk, ensuring no lumps form. Bring the mixture to a gentle simmer, stirring frequently until it thickens.

    Incorporate Cheese

    Reduce the heat to low and add the shredded Gouda cheese. Stir until melted and smooth. Season with salt, black pepper, garlic powder, and paprika.

    Combine with Pasta

    Add the cooked macaroni to the cheese sauce, stirring well to coat evenly.

Braised Short Ribs

    Sear the Ribs

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a simmer and let reduce by half.

    Add Broth and Herbs

    Add the beef broth, thyme, bay leaves, and the seared short ribs back to the pot. Bring to a boil, then reduce the heat to low.

    Braise the Ribs

    Cover the pot and let the ribs braise on low heat for about 2.5 to 3 hours, until the meat is tender and falling off the bone.

    Serve

    Remove the short ribs from the pot, slice if desired, and serve over the Gouda mac and cheese.
