    Peel and Cut Potatoes

    Peel the russet potatoes and then cut them into thin strips, approximately 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch.

    Soak Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This step helps to remove additional starch and results in crispier fries.

Cooking

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture, which can cause the oil to splatter.

    Fry the Potatoes (First Fry)

    Carefully add a batch of the dried potato strips into the hot oil. Fry for about 4-5 minutes or until they are pale and soft but not browned. Remove them from the oil and let them drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Return the softened potatoes to the hot oil in batches and fry for an additional 2-3 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

Seasoning

    While the frites are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika. Toss gently to coat evenly.
