Preparation of Fries

    Prepare Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse them under cold water to remove excess starch.

    Soak Potatoes

    Soak the cut potatoes in a bowl of cold water for at least 30 minutes. This helps to remove more starch and results in crispier fries.

    Dry Potatoes

    Drain the potatoes and pat them dry thoroughly with a clean kitchen towel.

Preparation of Fish

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the beer (or sparkling water) until the batter is smooth and thick.

    Prepare Fish

    Pat the fish fillets dry with paper towels. This helps the batter stick better.

Frying

    Heat Oil for Fries

    In a large pot or deep fryer, heat about 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fries

    Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

    Heat Oil for Fish

    In another pot or deep fryer, heat an additional 4 cups of vegetable oil to 375°F (190°C).

    Batter and Fry the Fish

    Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Serving

    Serve the crispy battered fish alongside the hot fries. Optionally, serve with tartar sauce and lemon wedges.
