In a large salad bowl, add the spring mix greens. Top it with the pickled onions evenly distributed across the greens.

Crumble the cooked bacon slices and sprinkle them over the salad. Follow by adding the blue cheese crumbles evenly across the top.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
Serve the Salad
