Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until all crumbs are coated with butter.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and allow to cool slightly.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add granulated sugar and beat until well combined.

Incorporate Remaining Ingredients
Add sour cream, vanilla extract, and eggs (one at a time), mixing until just combined and the mixture is smooth. Avoid overmixing.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (163°C) for about 60 minutes, or until the center is set and only slightly jiggly.

Cool the Cheesecake
Turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Prepare the Topping
In a small bowl, toss the mixed fresh berries with powdered sugar. Let sit for 10 minutes to allow the juices to release.

Serve the Cheesecake
Once the cheesecake is fully chilled, remove it from the springform pan. Top with the berry mixture and garnish with mint leaves before serving.
