Prepare Ancient Grains
Cook the ancient grains according to package instructions. Once cooked, let them cool.

Grill the Chicken
Marinate chicken breasts with olive oil, paprika, salt, and black pepper. Grill on medium heat for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.

Make Avocado Crema
In a blender, combine avocado, Greek yogurt or sour cream, lime juice, and salt. Blend until smooth and creamy.

Make Passion Fruit Vinaigrette
Whisk together passion fruit pulp, olive oil, honey, Dijon mustard, and salt in a small bowl until well combined.

Prepare Crispy Plantains
Peel and slice plantains into thin rounds. Heat oil in a frying pan and fry the plantain slices until golden and crispy. Remove and drain on paper towels.

In a large bowl, combine the kale, mixed greens, ancient grains, charred corn, and black beans. Toss with passion fruit vinaigrette until well coated.
