Cooking Grits

    Prepare Grits

    In a large saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes or until thickened and creamy. Remove from heat and set aside.

Cooking Toppings

    Cook Bacon

    In a skillet, cook 6 slices of bacon over medium heat until crispy. Remove from skillet and drain on paper towels. Chop into small pieces after cooling.

    Caramelize Onion

    In the same skillet, remove excess bacon grease, leaving about 1 tbsp. Add 1 medium sliced onion and cook over low heat for about 15-20 minutes until golden brown and caramelized.

    Cook Smoked Sausage

    Slice the smoked sausage and add to the skillet with the caramelized onions. Cook for an additional 5-7 minutes until heated through.

    Prepare Green Onions

    Chop 4 stalks of green onions and set aside for garnish.

    Melt Cheese

    In a mixing bowl, combine 1 cup each of Gouda, Swiss, and Provolone cheese. Set aside.

Making White Gravy

    Prepare Gravy Base

    In a medium saucepan, melt 4 tbs of butter over medium heat. Once melted, whisk in 1/4 cup of all-purpose flour until smooth and bubbly, about 1-2 minutes.

    Add Milk

    Slowly whisk in 2 cups of milk, continuing to whisk until the gravy thickens, about 5-7 minutes. Season with 1 tsp of black pepper.

Assembling the Bowl

    Combine and Serve

    In a bowl, layer the cooked grits as the base. Top with the chopped bacon, caramelized onions, smoked sausage, and cheese mixture. Drizzle generously with white gravy and garnish with chopped green onions.
