Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to resemble fries.

Cook the Frites
Toss the potato strips in olive oil, salt, and pepper. Spread them evenly on a baking sheet. Bake in a preheated oven at 425°F (220°C) for 25-30 minutes until golden brown, flipping halfway through.

Whisk the Egg Yolks
In a heat-proof bowl, whisk together the egg yolks and lemon juice until thick.

Plate the Dish
Place a generous serving of frites on a plate. Pour the white gravy over the frites and drizzle with hollandaise sauce. Top with sliced green onions.
