Cooking the Grains
- 1
Rinse and Cook
Rinse the quinoa under cold water until the water runs clear. In a medium saucepan, add quinoa, farro, barley, and millet along with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until grains are tender. Remove from heat and let it sit covered for an additional 5 minutes.
Preparing the Vegetables

Chop and Sauté
While the grains are cooking, chop the red bell pepper, carrot, zucchini, and red onion into small, even pieces. Heat a skillet over medium heat and add a tablespoon of olive oil. Sauté the chopped vegetables for about 5-7 minutes until they are tender. Season with salt and black pepper to taste.
Making the Dressing
- 3
Combine Ingredients
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until smooth and well combined.
Finishing Touches
