Method

Prepare the Vinaigrette

    Make the Amaro Thyme Vinaigrette

    In a small bowl, whisk together the amaro liqueur, fresh thyme, olive oil, red wine vinegar, honey, salt, and black pepper until well combined. Set aside.

Prepare the Salad

    Prepare the Mixed Greens

    In a large salad bowl, add the mixed greens as the base.

    Add Vegetables

    Halve the cherry tomatoes and add them to the salad bowl. Slice the cherry peppers and red onion thinly, then add them to the bowl along with the olives.

    Add Feta Cheese

    Crumble the feta cheese over the top of the salad.

Prepare the Garnishes

    Crispy Prosciutto

    In a skillet over medium heat, add the prosciutto slices and cook until crispy, about 3-4 minutes per side. Remove from skillet and let cool. Break into smaller pieces.

    Add Pistachios

    Roughly chop the pistachios and sprinkle them over the salad.

Assemble the Salad

    Combine and Serve

    Drizzle the amaro thyme vinaigrette over the salad and toss gently to combine. Top with crispy prosciutto pieces before serving.
