Prepare the Poke Base

    Rinse and Cook Sushi Rice

    Rinse 1 cup of sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 1.5 cups of water. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 18-20 minutes, or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together 2 tablespoons of rice vinegar, 1 teaspoon of sugar, and 1 teaspoon of salt until dissolved. Once the rice has rested, fluff it with a fork and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare the Tuna Marinade

    Slice the Tuna

    Using a sharp knife, cut 1 pound of fresh Ahi tuna into small cubes (about 1/2 inch).

    Mix the Marinade

    In a medium bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of sliced green onion, and 1 tablespoon of sesame seeds. Add the cubed tuna to the marinade, gently tossing to coat. If you like a bit of heat, add 1 teaspoon of Sriracha. Let it marinate for at least 10 minutes.

Assemble the Poke Bowl

    Prepare the Toppings

    While the tuna is marinating, slice 1 avocado, dice 1 cucumber, and thinly slice 3 radishes.

    Build the Bowl

    In a bowl, add a serving of the seasoned sushi rice as the base. Top it with the marinated tuna, sliced avocado, diced cucumber, sliced radishes, and a serving of seaweed salad. Garnish with pickled ginger.
