Season the Steak
Sprinkle salt and black pepper evenly over both sides of the ribeye steaks. Let them rest at room temperature for 30 minutes to enhance flavor.

Sear the Steak
In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the seasoned steaks to the skillet and sear for 3-4 minutes on each side for medium-rare, or until desired doneness.

Add Aromatics
During the last minute of cooking, add butter, crushed garlic cloves, and fresh thyme to the skillet. Spoon the melted butter over the steaks as they cook.

Rest the Steak
Remove the steaks from the skillet and let them rest on a plate for 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry thoroughly with a clean kitchen towel.

In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Potatoes (First Fry)
Working in batches, carefully add the potato strips to the hot oil and fry for about 4-5 minutes until they are soft but not browned. Remove them from the oil and drain on paper towels.

Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for an additional 2-3 minutes until golden brown and crispy. Drain on paper towels and season with salt.
