Preparation

    Prepare the Broccolini

    Rinse the broccolini under cold water to remove any dirt or grit. Trim the ends of the stems if they are tough or woody.

    Roast the Garlic

    Preheat your oven to 400°F (200°C). Wrap the unpeeled garlic cloves in aluminum foil and drizzle with a little olive oil. Roast in the oven for about 20-25 minutes or until soft and fragrant. Allow to cool, then squeeze the garlic out of the skins.

    Prepare the Red Chile

    Slice the red chile pepper in half lengthwise and remove the seeds for less heat, if desired. Thinly slice the chile into small pieces.

Cooking

    Sauté the Broccolini

    In a large skillet, heat the olive oil over medium heat. Once heated, add the broccolini and sauté for 5-7 minutes, stirring occasionally, until tender and vibrant green.

    Add Garlic and Chile

    Add the roasted garlic cloves and sliced red chile to the skillet. Cook for an additional 2-3 minutes, stirring frequently to combine and heat through.

    Season and Serve

    Season with salt and black pepper to taste. Remove from heat and transfer to a serving dish. Enjoy warm.
