Pistachio Torte Base

Pistachio Torte Base

    Prepare the Oven and Cake Pan

    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    Mix the Dry Ingredients

    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

    Cream Butter and Sugar

    In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.

    Add Eggs

    Add the eggs one at a time, mixing well after each addition.

    Incorporate Dry Ingredients

    Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined.

    Add Pistachios

    Fold in the chopped pistachios until evenly distributed.

    Bake the Torte

    Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Allow the torte to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Strawberry Mousse

    Prepare Gelatin

    In a small bowl, sprinkle the gelatin over 2 tablespoons of water and let it sit for about 5 minutes to bloom.

    Heat Gelatin

    In a small saucepan over low heat, stir the bloomed gelatin until fully dissolved. Remove from heat.

    Mix Strawberry Puree and Sugar

    In a large bowl, combine the strawberry puree with 1/2 cup of granulated sugar and mix until the sugar is dissolved.

    Add Dissolved Gelatin

    Stir the dissolved gelatin into the strawberry mixture until well combined.

    Whip Cream

    In another bowl, whip the heavy cream until soft peaks form.

    Fold Cream into Strawberry Mixture

    Gently fold the whipped cream into the strawberry mixture until well incorporated.

    Chill Mousse

    Cover and refrigerate the mousse for at least 2 hours or until set.

Assembly and Garnish

    Layer Mousse on Torte

    Once the torte is completely cooled, spread the strawberry mousse evenly on top of the torte.

    Sprinkle the top with toasted pistachios and garnish with sliced strawberries.
