Maple-Foie Gras Glaze

Preparation of Chicken

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Drizzle olive oil over the chicken breasts and rub it in. Season both sides with salt, black pepper, and garlic powder. Place fresh thyme on top of each breast.

Arrange on Baking Sheet
Place the seasoned chicken breasts on a baking sheet lined with parchment paper.
Maple-Foie Gras Glaze

Melt Foie Gras
In a small saucepan over low heat, melt the foie gras until it becomes liquid.

Combine Ingredients
Add maple syrup, soy sauce, white wine, and fresh lemon juice to the melted foie gras. Stir well until all ingredients are combined and the mixture is smooth.

Simmer the Glaze
Let the glaze simmer for about 5 minutes, stirring occasionally until it thickens slightly.
Cooking the Chicken

Roast the Chicken
Place the baking sheet with the chicken breasts in the preheated oven. Roast for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Glaze the Chicken
In the last 5 minutes of roasting, brush the maple-foie gras glaze generously over the chicken breasts.

Rest the Chicken
Once cooked, remove the chicken from the oven. Let it rest for 5 minutes before serving to allow the juices to redistribute.
