Bao Buns Preparation

    Make the Dough

    Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise for about 1 hour or until doubled in size.

    Shape and Steam

    Bring water to a boil in a steamer pot and steam the buns for 10-12 minutes until fluffy and cooked through. Remove and let cool.

Fried Chicken Preparation

    Prepare the Chicken

    In another bowl, whisk the egg and add cornstarch. Dip marinated chicken pieces into the egg mixture and then coat with cornstarch.

    Fry the Chicken

    Heat oil in a deep pan to 350°F (175°C). Fry the chicken pieces in batches for about 5-7 minutes until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Bao Buns

    Fill the Buns

    Take a bao bun and fill it with a few pieces of fried chicken. Top with crumbled queso fresco, chopped cilantro, smoked morita salsa, crushed corn chips, cucumber slices, and red onion.
