Steak Preparation

    Prepare the Steak

    Take the flat iron steak out of the refrigerator and allow it to come to room temperature for about 30 minutes. This helps in even cooking.

    Season the Steak

    Rub the steak with 2 tablespoons of olive oil, then season generously with salt and black pepper on both sides.

    Preheat the Grill

    Preheat your grill to high heat, about 450°F (232°C). Make sure the grates are clean and oiled to prevent sticking.

    Grill the Steak

    Place the steak on the hot grill and cook for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Rest the Steak

    Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.

Chimichurri Preparation

    Prepare the Chimichurri

    In a food processor, combine 1 cup of fresh parsley, 1 cup of fresh cilantro, and 4 garlic cloves. Blend until finely chopped.

    Add Liquids and Seasoning

    Add 1 tablespoon of red wine vinegar, 1 cup of olive oil, 1 teaspoon of red pepper flakes, 1 teaspoon of salt, and 1 teaspoon of black pepper to the food processor.

    Blend the Chimichurri

    Pulse the mixture until well combined, but still slightly chunky. Taste and adjust seasoning if necessary.

    Drizzle the chimichurri sauce over the sliced steak before serving or serve it on the side.
