Method

Base Preparation

  1. 1

    Make the Base

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand.

  2. 2

    Press the Base

Press the mixture firmly into the bottom of an 8x8 inch baking dish to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool slightly.

Filling Preparation

  1. 3

    Prepare the Filling

In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until well combined.

  2. 4

    Add Flavorings

Add the vanilla extract and sour cream to the cream cheese mixture, mixing until smooth. Then, add the eggs one at a time, mixing until just combined after each addition.

  3. 5

    Combine with Base

Pour the filling over the cooled graham cracker base, spreading it evenly. Bake in the oven for 25-30 minutes, or until the center is set but slightly jiggly. Remove from the oven and let cool to room temperature.

Topping Preparation

  1. 6

    Prepare the Topping

In a small bowl, combine the fresh blueberries, honey, and lemon zest. Gently mix together to coat the blueberries.

  2. 7

    Assemble the Bars

Once the filling has cooled, top the bars with the blueberry mixture, spreading it evenly over the surface.

  3. 8

    Chill and Serve

Refrigerate the bars for at least 2 hours before cutting into squares and serving.
